Yes you can remote connect via WiFi and LTE on the Watch 5 Pro but the process is currently far from automatic. Currently it seems you need to turn off Bluetooth on the watch and possibly even manually select the WiFi network before it will remotely connect. Once it has remotely connected it will maintain that connection via LTE if WiFi drops.
